Beer is the third most consumed beverage in the world, after water and tea! Global beer market is expected to reach $750 Billion by 2022. US beer market, alone, sums up to $100 Billion today. And it is being disrupted by craft beer manufacturers.

Craft beer only has 12% of the market volume, but the market value share is 22%. According to Brewers Association, craft beer had 10% growth in sales in 2016. This means people are willing to pay more for quality and brand. Craft is developing a new type of consumer with a higher expectation.

For the brewery, that expectation can be met with a bottle and a can, because it is going directly from the brewery to the consumer. So the quality is consistent. However when it comes to draft we lose that consistency, because now somebody else is dispensing the beer.

When it comes to consistent quality in draft beer, five things have to be there:

  1. Proper serving temperature: As seen in the chart below, there are many beer styles and all of them have a specific carbonation level and serving temperature.
  2. Proper pressure:  Pressure is what keeps the beer carbonated and fresh all the way from keg to glass. Having too much or too little pressure affects the way the beer is dispensed. Too much pressure results in foamy beer that comes quickly out of the faucet. Furthermore, high pressure will result in over-carbonated beer that will taste gassy. Too little pressure also creates foam because the CO2 breaks free from the beer as it enters your glass. If the pressure is not raised to the appropriate level, the beer will eventually become flat. In general, breweries have specific recommended carbonation levels for their beers and bars are expected to adjust their pressure settings to meet these carbonation levels.
  3. Consistent line cleaning: Cleaning the lines is extremely important and definitely not optional. Ideally, beer lines should be cleaned between each keg, and once every two weeks at the minimum.   4. Fresh kegs: Old beer is often bitter and sometimes completely lacking in flavor and zest. Beer may also have a foul odor or unpleasant taste.
  5. Proper pouring technique: In order to serve a good beer, one has to
    • Hold the glass a half-inch to an inch below the faucet.
    • Tilt the glass 45° and open the faucet all the way, pouring down the side of the glass.
    • When 3/4th of the glass is half full, stand the glass straight up and continue pouring directly into the center of the glass.
    • Quickly close the faucet,
    • Pour a three-quarter-inch creamy head at the top of the glass. This thick, creamy head should leave lacing on the glass as the beer is enjoyed.
